Its been a while since I ran a minimal install, so in light of your findings, I will try to test and confirm everything is still functional. As for the tables, see below. As for the database, I would suggest removing directories first and then installing. Any packages not selected during install should prevent creation of tables - so I'm not sure why you had unnecessary tables created. Understand also, that de-activating packages will NOT remove the tables, for data preservations sake.
